My Food Habits
For my first food Friday post I decided it would be best to explain my eating situation and my food needs. When I was 18 years old I developed anaphylactic food allergies to fruit and nuts. Yes, you read that correctly, fruit and nuts (except tomatoes). That means that if I consume any of those things then I will end up in the hospital with a very severe reaction. This limits my ability to get natural sugars into my diet as well as healthy fats. When I developed these allergies I was absolutely devastated as my favourite foods were peaches and almonds.
The second thing I want to explain is that I am in the process of figuring out some problems I've been having with my thyroid. I've been having issues for about a year with little to no progress in a diagnosis. I have lost about 15 pounds in the last 6 months without trying, I tend to be quite tired and lethargic, and I experience a rapid heart beat quite frequently. I had blood work done and an ultrasound on my thyroid where they discovered nodules in my thyroid and that my thyroid antibody levels were way too high. I'm waiting (have been for months) to hear from a specialist about an appointment as my GP thinks I may have Grave's Disease. Because of this problem, I tend to eat quite frequently to try to keep my weight on.
Despite these problems I still manage to maintain a fairly healthy diet (even though I tend to crave salt and vinegar potato chips and my homemade oatmeal cookies). Food Fridays are going to be all about food (yay!). On Fridays I will share either a new favourite food that I have discovered, or a what I ate on that day post, or one of my favourite recipes (I love to cook and bake). I think food Friday's may be the theme I'm most excited about because I have a serious love for food.
